Goats cheese, honey and honeycomb

This is just an assembly of nice things. A simple simple dessert that very good ingredients can turn into something special.


The cheese should be young, milky, tart and slightly chalky, soft and crumbly with a mild farmyard pong. It shouldn’t be fridge cold, but perceptively cool like cave stone.


The honey should be fragrant of lavender, heather, blossom and silky sweet. And slightly heated – warm and golden like pourable spring sunshine.


And the honeycomb? Well that’s just crunchy sugar. Sweet texture. Use the inside of a Crunchie if you like.
