The Christmas day starter – always a tricky thing to get right. You want it to be special but not detract from the main event. Luxurious yet not too rich. Flavourful and clean. Simple, doable in advance, but not boring.
Last year I put on an anti-pasti style smorgasbord. But there was loads of it, which seriously affected my ability to put away seconds, thirds, fourths of turkey dinner.
So I started thinking along the lines of smoked salmon and cream cheese and came up with this little savoury cheesecake.
It had a base of ryvita and ginger oat biscuit crumbs, under a creamy layer of whipped philadelphia seasoned with horseradish, lemon juice and zest.
Then a layer of chopped smoked salmon under a fresh and sharp lawn of dill, chives and capers.
Followed by a final indulgent draping of smoked salmon and a scattering of roe or caviar. Have yourself a very merry Christmas!!
